Determination of acrylamide in coffee by high performance liquid chromatography

The bachelor's thesis aimed to optimize the method of determining acrylamide in coffee using high-efficiency liquid chromatography with a diode-array detector. In the theoretical part of the bachelor's thesis, attention was paid to the taxonomic distribution of coffee, it's processing and chemical composition. Part of the theoretical frequency of the work involved describing the formation of acrylamide in coffee and possible methods of determining it. The practical part looked at validating the method, which was used in the analysis of coffee samples. The individual samples of coffee varied in the type of coffee and the societies where the coffee was obtained. Determination of the acrylamide content has been carried out on commercial, franchised, and selective coffees of the arabica species. Finally, the determination of acrylamide was made in the coffee of various types, in robusta and arabica.

The aim of this bachelor thesis was determination of the acrylamide levels in selected types of roasted ground coffee. The particular samples of coffee differed in brand and composition. In practical part the determination of acrylamide levels in coffee extracts was analyzed by using gas chromatography in combination with mass spectrometry.
Identifying driving factors of coffee prices

This bachelor thesis focuses on the price of coffee and the factors affecting it. The study aims to identify these factors to predict price movement. This thesis also answers the question whether the factors observed have the same impact on two coffee varieties: arabica and robusta. There were defined five groups of the factors: supply, demand, climate, commodity market and financial. The effect is observed for annual coffee price data that were obtained from the International Coffee Organization (ICO). The observed period is between 1965 and 2018. The impact of the factors was detected by the ARDL regression, both in the short run and the long run. Based on the results, the price is affected mostly by supply, demand, and financial factors. Moreover, robusta's price specifically is driven mainly by the factors explaining the power of the US dollar. Arabica's price, on the other hand, is affected by the supply and demand factors: exports, and the growth of GDP. This finding supports the claim that these two coffee varieties should be considered as two different commodities. The results suggest that the establishment of an association of the biggest coffee producers regulating coffee exports would help in control of coffee prices.

Bachelor thesis deals biologically active substances in coffee. The first part of work is include the history of coffee, the characteristics of coffee trees, the production of coffee from the step of the harvest to the roasting and other adjustments, the types of coffee according to the degree of roasting. The main theme of second part is the chemical composition of coffee beans. We look at biologically active substances in coffee, their content and influence on the human organism, which is the main theme of this work. And finally, following section deals undesirable substances in coffee, its formation during the processing of coffee beans and the effect on health.

Fair Trade focusing on coffee

The main target of the following Bachelor's thesis is to point out facts which are related to the international business of coffee in connection with the fair trade movement. The first chapter is designed to introduce the fair trade movement and its history (development). The forms of fair trade are outlined briefly. The second chapter deals with coffee as an exporting material. Then are introduced standards for coffee as a fair trade product. These are closely connected to explaining the barriers on entering the coffee market. The last chapter compares Brasil and Costa Rica from the point of view of economic indexes. Attention is concentrated on coffee, its position in the economy of both countries and its share of exports of Brasil and Costa Rica.
